PAV BHAJI RECIPE :-Pav is an Indian bread and bhaji is mashed vegetables cooked with spice powder.Mumbai street foods are popular across India,Pav bhaji is one of them.This recipe is adapted from chef Sanjeev kapoor's cook book"Ode to Indian food".This is the best pav bhaji recipe that I have ever loved.
HOW TO MAKE PAV BHAJI:-
Step:-
1. boil ,cool,peel and grate potatoes wash and finely chop tomatoes.wash and grate cauliflower,peel.wash and finely chop onion peel and wash ginger,garlic and grind to a fine paste.
2.Wash ,halve,remove seeds and finely chop capsicum.wash,remove items and finely chop green chillies.
3.clean ,wash and finely chop fresh coriander leaves.wash and boil the green peas in salted water
till soft ,drain and mash lightly and keep aside.cut lemon into wedges.
4.heat oil in a pan and add 3/4 quantity of chopped onions .saute till light brown,add chopped green chillies and ginger garlic paste.stir,fry for a half minute.
5.add half the quantity of chopped tomatoes and cook on medium heat for 3-4 minutes ,stirring
continously or till oil seperates from the masala,add,chopped capsicum,boiled and lightly mash peas,grated cauliflower,grated boiled potatoes.
6.bring it to a boil and simmer for 10 minutes,pressing with back of the spoon a few minutes,till all the vegetables are completely mashed,and pav bhaji masala ,salt and the rest of the chopped tomatoes cook on medium heat for 2 minutes,stirring.
7.heat half of the butter in a thick bottomed pan or tawa .slice pav horizontally in two and pan fry in butter for half a minute ,pressing 2 or 3 times or till pav is crisp and light brown.
8.garnish the bhaji with chopped corriander leaves,remaining butter and serve hot with pav accompanied with remaining chopped onion and lemon wedges.
